A great colorful appetizer that only gets better with farm fresh produce.

6          Roma tomatoes

2          Medium zucchini

4          Green onions

2          Tablespoons of Basil

4          Garlic cloves

Dressing:

2          Tablespoons of lemon juice

2          Tablespoons of Olive Oil

1          Pint of crumbled feta cheese

1          Loaf of French or Italian bread & Butter

 

Finely chop the zucchini and place in a large bowl.

Seed and chop the tomatoes and add to the zucchini.

Slice the green onion and add to the bowl.

Add 2 to 4 minced garlic cloves and basil to the bowl.

Wisk together the lemon juice and olive oil drizzle to coat ingredients in the large bowl.

Add feta and gently fold in all ingredients in large bowl. Salt and pepper to taste. Chill until ready to serve.

Thinly slice the loaf of French bread, butter lightly both sides and grill or toast.

Note: Feel free to tweak this recipe to your liking i.e., many have substituted Triscuits and Melba Toast for the  Bread.
