1          Large bag of Kale – usually found at Walmart – Stems removed

1          Small Bag of Seasoned Croutons

Dressing:

½         Jar of Earth Balance Mayo

1          Can of flat anchovies – Pat Dry

1          Tablespoon of Dijon Mustard

3          Tablespoons of Shredded Three Cheese Blend (Parmesan, Romano, & Asiago)

2          Tablespoons of Grapeseed Oil

2          Cloves of Garlic finely minced

Blend all of the above ingredients in a small food processor.

Salad:

In a very large bowl put about ½ of the bag of Kale in it and mix in the dressing. Keep adding Kale and more dressing until all the kale has been added. Keep stirring the mixture until well blended and add about ¾ of the bag of croutons. Serve in bowls topped with some of the shredded Three Cheese Blend.

This goes well with a glass of red blend wine.

In Tennessee I have only been able to find Earth Balance Mayo at Earth Fare. You can use any vegetarian Mayo.
