One of our favorites. These are not your grandmothers mushy green beans flavored with Bacon.


1 ½ to 2 lbs.,   Fresh Green Beans

1 pint               Cherry or grape tomatoes

½                     small red onion


2 tablespoons                         Olive Oil

2 tablespoons                         Red wine vinegar

2 teaspoons                Dijon mustard

Topping:                      Grated Parmesan cheese

Clean and trim green beans and add to a large pot of boiling water uncovered. Blanch green beans for approximately 5 to 6 minutes give or take.

Remove from heat, drain hot water and rinse in cold water then submerge in ice.

While beans are being blanched halve the tomatoes and thinly slice the red onion. When choosing a red onion look for a flat one they are the sweetest.

Next prepare the dressing by whisking the olive oil, red wine vinegar and Dijon Mustard.

Once the beans have cooled, strain and add to a large bowl. Add the tomatoes, onions and drizzle the dressing, tossing to coat.

Chill until ready to serve with a topping of Parmesan Cheese. Salt and pepper to taste.

NOTE: If you prefer a softer bean, simply cook a little longer.
