This is one of the easiest soups to make in a hurry. We have been playing around with this recipe for a while. Whether you use chicken broth, vegetable or just water, you are in for a treat.
2 Packages of Match sticks Carrots
2 Leeks, light green and white parts thinly sliced
½ teaspoon Curry Powder
1 Package of Shelled Pistachios
2 Tablespoons of Olive Oil
1 32 ounce of chicken or Vegetable Broth
On the Campfire, heat oil in a large pot over medium to high flame. Add carrots, leeks, cover and cook for about 15 minutes until veggies are tender and beginning to brown.
Stir in Curry and add the broth, chicken or vegetable or 4 cups of water and bring to a simmer.
Remove from fire, puree with an immersion blender and season with salt and pepper.
Toss some pistachios on top and serve
