Combining the taste of seafood and vegetables is good any day. A fabulous appetizer.

6          Roma Tomatoes

3          Shallots

2          Cloves of Garlic

½         Tablespoon of Basil

¾         Tablespoon of Oregano

1          Package of Imitation crab meat

Dressing:

¼          Cup of Olive Oil.

1          Loaf of French or Italian Bread & Butter

 

Chop, seed tomatoes and place in a large bowl.

Finely chop shallots and add to tomatoes in the large bowl.

Add minced garlic, basil, and oregano to ingredients in large bowl.

Drizzle Olive oil to coat.

Chop imitation crab meat and fold into large bowl with other ingredients and chill until ready to serve.

Thinly slice bread coat lightly with butter grill or toast.

NOTE: Feel free to tweak this recipe to your liking i.e., many have substituted Triscuits or Melba Toast for the Bread.
