We tend to keep a supply of herbs and spices for our camping recipes. Please add or delete as you feel to suite your own taste.

This recipe is a simple way to cook and catfish, fresh caught, fillets, frozen nuggets, etc. We like to pair it with a prepared bag of Cole slaw mix and our favorite slaw dressing.

1          Pound of Catfish Nuggets

2          Eggs or equivalent egg beaters

3          Tablespoons of Buttermilk

1          Cup of Cornmeal

1          Cup of Flour

1          Teaspoons of Black Pepper

1          Teaspoon of Garlic Powder

1          Teaspoon of Onion Powder

1          Teaspoon of Dried Basil

2          Tablespoons Cajun Seasoning

To prepare, clean and cut the catfish into 2 to 3 inch pieces, then place in a bowl with the egg and buttermilk mixture.

Combine remaining ingredients and place in a large freezer bag, and toss to mix. Then add catfish pieces a few at a time and toss until coated.

Fry the catfish in oil coated skillet over medium high heat until golden brown.

Serve with your favorite sauce and side.
