One of our easy favorites to make as a side or serve with your favorite chips.

¾ cup of quick cooking Barley.

Prepare Barley according to the package directions. Allow to cool before combining with other ingredients.

1 can of Red Kidney Beans, rinsed

1 can of Black Beans, rinsed

1 can of corn, drained but not rinsed

Rinse, drain and transfer to a large bowl. Feel free to use fresh when in season.

1 Large red pepper chopped

6 green onions chopped

1/3 cup of cilantro minced. Parsley is a good substitute


¾ cup of Olive Oil

1/3 cup of Red Wine Vinegar

2 Garlic cloves minced

¾ teaspoon of  salt

½ teaspoon of Red Pepper Flakes

¼ teaspoon of Black Pepper

Combine ingredients by whisking together in a small bowl, then pour over salad. Toss to coat and chill until serving.

This salad is camping friendly as you can prepare and make ahead several days.
